I initially uploaded it when I got the invitation to apply for pr as fsw, but since then I withdraw most of the money and now I have around half in my bank account and the other half as cash.

I was asked for new bank letters a few days before my application (FSW) turned 1 year. So yes, IRCC can come back and ask

I see, do you also know if the money should be 3 month before they ask me for the proof or could I wait and deposit them the same day they ask me for the proof?

IRCC can ask for any additional documents that they want. Usually, an updates PoF, Sch A and PCC are the most common requests.
