Canada PR - Can I just make one day visit to Canada before Feb 2016 and come back to USA and maintain the Canadian PR? I would worry less at this moment for the Canadian citizenship.
US PR - I am currently on H-1B but about to apply for my 485 in about a week or so.
I guess my intent is to at least have a backup plan if my US PR doesn't workout. I don't want to lose the opportunity of moving to Canada.

If you are at 140 stage and also on H1 then its easy to maintain Canada PR by staying at the border in canada and work in US by travelling everyday. But if you are going to file 485 then your lawyer only will tell you to be in US because your status is going to change from non-immigrant to immigrant status. So its tough buddy.
Canada entry - Yes, you can enter and get your COPR (confirmation of PR) and make your PR card application and have the card mailed to some address there so that you can reenter. I still have doubt on this as i too have same question below to our experts .

"Can we just enter and stay for 1-2 weeks, apply for PR card, come back to US, get the card mailed to friends address in Canada, friend ships the card, and now can we reenter?" Or should we need to wait in Canada till we get our PR card?
