Express entry work experience proof-help!

Hi All

I am reviewing the required documentation for the Express entry. I am eligible for both the Canadian Experience Class and the Federal Skilled worker programs.
For both of them, it is required to provide proof for the work experience declared.

I pasted below some of the wording used in the CIC site.

My question is the following: I have worked in many companies for different small job while I was student or even after. I don;t consider these as my main work experience, and as such I as not going to declare them.
My company already supported me for the LMIA process.. so I was going to mostly mention my current job (I have been doing since 2013) .

Is it ok not to worry about ALL my work experience? Or is it mandatory to provide proof for ALL work experience.
I find the wording very vague, as it indicates only job we declare.. so to me, it 's up to the applicant to list the experience..

Please advise, your input would be really appreciated

Purpose

To prove each work experience claim and to validate that the applicant meets program requirements
Document requirements

The personalized document checklist in MyCIC prompts the applicant with an upload field for each work experience declared.
At the completeness check, the processing office determines only whether the required documents are included. The validity or fraudulence of the information is assessed only if and when the application is placed into processing.

The following documents are mandatory for each work experience declared:

Hi, only declare the 'Work Experience' you have employer reference letters for (including the job you are being supported in the LMIA process for).

Declare the jobs in 'Personal History' (that you are not listing in the 'Employment History' section).

Please Note: You will not get any points for jobs you undertook during the time you were a 'Student'.

I have worked for a company as a business analyst on 2011, at that time i leave the company i just get experience and release letter, though i didn't have any plan for immigration at that time so i didn't bother too much on that. besides, recently i checked some of my bank accounts and and can trace last 9 months salary transaction details. But unfortunately, when i contact the company i come to know that it has closed permanently. In this situation what should I do?
