What if we got ITA and our express entry profile expires soon.

After you apply what happens to our express entry profile? Does it expire? or Not?

as long as you get your ITA and send your application before the profile expires then you're good

It freezes...in time post ITA. So no worries there.

I am planning to submit (received ITA on Dec 22nd) after the date my express entry profile expires (Feb 19th) as I still don't have all the documents. Is that possible?

Yes. Once you have ITA profile does not expire.
