I am a chef and I worked in Canada for six months in 2013, my employer willing to hire me again but we were thinking that it'd be easier if I come as tourist and we do the process from inside Canada, hopefully get called from express entry as trade people or trade worker (I don't know what you call it) since cooks and chefs are eligible, is that possible?

You might wanna watch "Border Security: Canada's Frontline" before you do that.

that means it is not possible or it is just not a good idea?

It's sort of illegal. You are not declaring your real purpose of coming to Canada.

It's not sort of, it actually is. You can be refused entry and banned for certain years (see the show Border Security Canada, it's a good show)

You can apply Express entry from outside Canada. Why?
