Express Entry Canadian Experience

For Canadian experience in express entry should we still be at the job at the time of ITA or is it also considered even if it's in the past?
I already have more than a year of Canadian experience in NOC A but I may not be able to continue working there because of a better opportunity at another job.

You can leave your job unless you are under a closed work permit.

And for proof of employment, I should get the letter after ITA or as soon as I quit my job?
