yes, you got it correct, I mean to say... Country of nationality/citizenship...
Because applicants applying from within Canada will all mention as "inland applicant".. and country of residence will be Canada for them, same may be true for people living in country different than their nationality.. for ex, there are many Indians working in middle-east countries. The same will hold true for them also.
If you can add a separate column of "Country of nationality/citizenship, then it will exactly give the number of applicants applying country-wise based on their nationality/citizenship..
It is very much similar to the mid-year report of CIC.

Few more things have came up in my mind... just wanted to share it with you... I am sure you are open for feedbacks/suggestions, thats why I am sharing it here with you..
A single NOC carries many job titles, so if another column for " designation/job title of primary NOC" can be added, this will give more clarity about NOC-wise and designation-wise distribution of applicants.
I think you have made a fantastic effort while preparing this spreadsheet/s and I am sure it will serve as a comprehensive data pool for we,applicants to refer for each and every draw.
Also, you can add one column for "date EE profile created".
