Is it absolutely mandatory to include remuneration in the experience letters? I can get it done for my present company but for the previous ones, it will be a bit difficult to approach them and get a new letter with remuneration mentioned there in.

Yes, remuneration details are required to be mentioned in the experience letter. In case you are not able to get it, submit the reference letter that you have along with copies of latest pay stubs and a letter of explanation stating why you do not have those mentioned in the reference letter and what alternate document you have submitted.

Hi Stanlee,

Do you know how many pay stubs we should include? I have about 50 (4 years of work) and I don't want have all of them translated. Also, do we need to notarize a reference letter if the company closed, but I still have a bunch of supporting documents?

If the experience you are referring to is foreign experience, then salary slips is not a mandatory document, reference letter should be fine as long it has all the details as mentioned here http://www.cic.gc.ca/english/resources/tools/perm/express/intake-complete.asp.

In case the reference letter does not have the required information (for example, salary details), then you will have to submit salary slips, bank statements showing salary credits along with a LOE. Logically speaking last 6 months' salary slips for each job where you do not have this information in the reference letter.
