As my wife has a experience of 4 years and then she left the job after marriage and then again for one and a half year she joined his same job and is currenty working. Do we need to surrender job before applying?

No need to surrender. She can apply while working.
 
Then what will the experience letter states that she is working from
this date to till date????
You will have to provide two reference letters, one for job before marriage
and one for current. From date till NOW.
 
As she was working as computer teacher and also as computer technician. Which noc we should use????

Choose only one NOC. Decide yourself which NOC is more inclined and use that.

I am applying for an express entry immigration under FSW program and i am the main applicant.
I want to ask that when i joined my company, i was single, and when i resigned, i was married. so my question is that, when an employer issues a work experience letter, do they mention Ms. (My first and last name) OR Miss. ( My first and last name) OR Mrs. ( my husband's first and my first name). Please advice.

P.S: I didn't changed my surname after marriage.
