What are my opportunities in Canada for a person who has obtained a MBA. As starting the immigration process and petrified I won't find employment?

There are certainly good no of jobs in market, but just like any place else, you need to crack interviews. There is no discrimination based on where you come from and which university you have done your MBA from.

My wife and I got jobs in our own field (IT) and our employers did not even ask us for educational documents. They were happy to extend job offers based on interview discussion and our previous experience in the field.

The job hunting process is same worldwide, at least in IT. You apply to vacancies online.. Then wait for employer to go through your resume.
If employer is interested in your profile, you get called for an interview.

Is your Linkedin profile updated? Apply jobs from there too. Make connections... and best of luck. I got my 3 interview calls/emails from Linkedin.
Also, check jobs.gc.ca .. rest you know... monster, indeed, roberthalf, ranstand, etc...
