Does the government check up on you with your work,
like if i switch jobs before my application is being processed , but already sent in
should i send them something saying i have a new job?

Yes, Immigration will look into every little bit of information you sent them.
Including your job, they will look into that to see you are actually employed and have an income,
if they discover you're not they will either send back the whole application, or just request a new letter of employment .
So make sure you figure everything out now,
it really is a pain getting your application sent back to because you missed something or did something wrong,

Hold on a sec: we don't even know if this is the sponsor or the applicant! And I don't know if it's actually true that they will call an employer - even a sponsor's employer - to verify employment when the sponsor includes a currently dated employment letter on company letterhead. If a sponsor was to change jobs during processing, they could update CIC, but I don't think it's absolutely necessary - especially when sponsoring a spouse/dependent. There are no minimum income requirements for spousal/dependent sponsorships - as long as a sponsor is still working (even with a new employer) you're good as far as CIC is concerned.

I agree. It is not necessary to update a employment status if it changes for the sponsor. For the applicant it is not necessary to update employment either unless there is a significant change ( move to another country).
As a spousal sponsor there is no minimum income. You just need to proof that you can provide for your spouse and that can be independant from employment.

CIC asks to update your status about marital change , death or birth, change of address or contact information etc. I did not read anything about change of employment.
When I applied for sponsorship CIC-M, I was unemployed. I just returned to Canada. After two weeks of sending my application, I got a job. So I sent it to CIC-M with an explanation letter. They sent me back my employment letter with a forwarding letter.
I was approved as a sponsor, no roblem. By the way it is a spouse and dependent child sponsorship.
