Hello,
I've got two questions:
1) can I apply for FSW visa if I'm not employed at that particular moment ? Or better to do it after I find a new job?
2) my former Employer (for the last 8 years ) was a foreign company which is currently leaving the market (due to the crisis). I've heard that I will need some references from them. What if I couldn't arrange it after it's liquidation?

1) Yes you can.
2) You should gather all the documents requested by the office that will be processing your application. Read carefully and try to follow all the guidelines. If your application is going to be based solely on this job, then I recommend you to act quickly.

right... get the letters quickly.. that will help your case...

but, even if you cannot gather the docs, you can denitely prove the liquidity of the company through media communication, etc and it could work
 
reason why you could not furnish reference letter... and that the company wound up.

you can give URL of the news of company's winding-up or send s newspaper article.

you can work that out late. it's too early to ask all these things :)
