I had submitted my e-APR on Jan 22 2017 and received CoPr on March 31st 2017.
From my experience I can say that you only need to provide proof for the work experience that you are claiming points for. If your work experience letter is not detailed enough , provide as many documents as you can to prove the nature of work you did. Make sure that you organize them in a single document (for each employment) and provide a cover letter in the beginning of the document.
Foreign work experience: I had 3.5 yrs of work experience but claimed only 1.5 yrs. (I had worked with 3 different companies in India and I could not obtain work experience letters from two employers (in CIC required format). I included it in personal history and left a note in the Letter of Explanation).

The letter was issued on company’s official letter head. Since it did not had a detailed description on my duties and responsibilities, I included an “email” from my former manager describing duties and responsibilities. I also provided copies of original offer letter, confirmation letter , relieving letter , performance appreciation letters, award statements I received. I scanned all these as a single pdf and included a cover letter explaining my situation. I guess that worked.
Canadian Work experience
I was able to get a letter from my manager describing duties and responsibilities and a letter from HR manager that included my joining date , hours per week , salary etc. I also included copies of recent pay slips, T4 and NOA from CRA. The letters were issued on company’s official letterhead.
