Hi, I just wanted to know if I ignore the expired date to continue stay in Vancouver BC, Canada. What's the consequence I have to face by immigration?

If you are a US citizen you can easily return to the US. If you overstay your visa you can eventually be deported but more importantly are likely to have difficulty entering Canada or other countries in the future if you didn't follow the terms of your visitor status. Why do you want/need to remain in Canada and have you filed for an extension if your status is still valid?

I'm currently is holding Visitor Record to extend 6 more months in Canada, but is due on 12/26/2020. I came to Vancouver on last Dec 26 hoping to leave for few months periods due to terminal cancer my elderly cousin has diagnosed. She lives alone with no relatives around. Now, she's still alive and I can't leave her. I'm applying second times to stay with her, not sure the immigration office will approve me to stay longer.

Would include all that information and proof that you have the funds to support yourself without working in Canada. Worse comes to worse there are things like hospice and nursing homes. It will take a while to process your extension request.
