You dont need to put it in SOP, if you actually applied for PR (Creating express entry profile is not applying for PR) you need to mention that in the appropriate section on the forms. Actually I would just mention even creating the EE profile while its not an immigration application I have heard of people denied because they didnt mention it.

But mentioning about ee profile clearly states that your intention is to immigrate? surely it will affect study permit no?

You only need to mention a UCI number in your application which will inform the VO of all your previous applications. Since no UCI number is generated on creating an EE profile, it is thus not noted by the VO for future applications.

Thus the conundrum you are not required to mention a simple EE profile because it is not an immigration application but I have heard of someone being rejected because of not mentioning EE profile, its a rare issue I think and you are probably safe not mentioning it.

UCI number or not doesn't matter, its optional to put it in an application.
All I am saying if there have been actual cases of people being rejected due to not mentioning EE profile, wrongly according to the rules but you are still rejected and only option is to challenge it in Canadian court which is costly and time consuming. I heard this from a lawyer on a podcast.
