I had my photo taken at a UPS store and they delivered it electronically to my email. I know that for physical photos they require a signature and stamp on the back of the photo, but since mine was electronically deliver would a screenshot of the email + a scan of the physical receipt be enough information?

you need to have the information at the back. You will need to upload front of photo and back of photo with the place you take it .
But hey maybe try and see .. we can’t say what immigration take from what they don’t take..

Edit: I've just found this piece of information

For digital photos, this information can be provided in one separate document including a confirmation from the photo studio (i.e. receipt).

I feel like this information must have been recently added to the website as I don't remember seeing it some time ago!

Yes, maybe like staples or shoppers drug mart if close by. They stamp at the back . On the document checklist it tell you about the photo specifications.
