With documents, I refer to admission or offer letters, and also Receipt of payment of fees.
Do they cross check such documents with the school authorities?

If you have fake documents in your application - you need to withdraw your application as soon as you possibly can. Otherwise you're going to end up with a five year ban from Canada. It's very easy for IRCC to check whether your documents are real or fake and they do this as part of the application process. There's nothing to be stressed about as long as all of your documents are real. If any of your documents are fake, well then what you are doing is fraud and a crime - and you should be very stressed out since you are messing up your future.

Yes, they check. Constantly. As @scylla says, you'll be caught and banned from Canada. Canada will also inform other countries of your fraud.

They already have all your information associate with your data, and yes they do check them. So it is important that you renew your study permit if you change school.
