Yes - IRCC verifies documents. I'm not sure I understand your question of how they verify them whe they are submitted online. IRCC uses the same document verification processes regardless of whether the documents are submitted in paper or online.

Yes, they will verify if necessary and have their own resource for this. I've also done mobile live scan fingerprinting, which I was very pleased with.
