I don't think they cross check work and education. For residency they check with CBSA. But if they are suspicious with any contradictory information in application they will ask for all the proofs of everything you have mentioned in application.
 
you should assume they call, since they have your SIN they will verify address, work history, education easily via CRA, Service Canada & Ministry of education databases who own public schools same way they get certificate of english/french verification at a blink of eye without even calling. IRCC & CBSA have now capabilities to check above information including health status about visa free countries like UK & USA as they share info as we heard some canadians have been turned away from the border due to health issues like mental diagnosis which they think this person might snap and be danger to himself or others when they are in US.

if you did not work or attend education but list your english/french classes its not crime or affect your application but to lie will only bring nightmare.

i seen many people applications rejected and reapply passport because they lie about gaurentorer or refrences.

Unless you are fraud yourself you shouldn't be bothered how they check or what they check. Come on man stop playing games here. Before you were asking fiinger print questions too if people get this request or not if they already have given finger prints for PR. If you have not committed a crime you shouldn't be bothered about that. And you were also planning to leave Canada after applying for citizenship. You are raising lots of suspicions.

Be honest and truthful and keep your guard up. They gonna catch you...
