I am a couple of days away from sending in my spousal sponsorship visa application (inland). I, the applicant am currently in Canada on a 2 year CIC work visa which expires in 1 month from now. Should I apply for some kind of extension to keep my status in Canada, or is sending in my other application enough for me to stay? If sending in my visa application is enough for me to stay, will it matter if my current work visa expires before my application is received (but sent)?

Did you send an open work permit app along with the sponsorship app?
Then yes, you will have implied status AS LONG AS the application isn't returned as incomplete.
Assuming no returned of application then yes you’re under implied status because of the OWP together with your inland spousal sponsorship application. But what if IRCC return your application for some reason, still better to apply an extension of your current visa just to be safe.

It is always better to apply extension, then you don't need to worried about the OPW returns. Doesn't matter apply Extension with OPW at the same time or not, because they are different process and different office.
And you have to send in a police check with your sponsorship file, that request on the checklist.
Please send in the police check with your initial application package. As per the notice in CIC website, police certificate and Schedule A (IMM 5669) are now required upfront.
