Do I have to prove funds for children who are not accompanying me to Canada?

I read somewhere that even if a child will not accompany the applicant or spouse to Canada, the applicant has to show sufficient proof of funds as if they were coming, is this correct?

Yes. http://www.cic.gc.ca/english/immigrate/skilled/funds.asp

You must be able to use this money to pay the costs of living for your family (even if they are not coming with you).

And all your children are classed as your dependent children, even if they live with your ex?

That is correct, as far as I am aware.

And what about your the children of your spouse, who live with your spouse's ex? Also? The CIC seems to be ambiguous.

If they are your children or your adopted children, yes.
