I would like to know what diplomas and certificates are need to be added in my profile

I called MIDI and they told me I must put all certificates from 5th grade and above

Which is

5th to 9th ( Middle School )
10th to 12th ( Secondary School )
3 years Certificate Diploma ( College )

Is that correct?

Nothing for the time.
MIDI is trying to fool you. If you have entered your secondary, higher secondary & degree details in your mon projet account then you need to provide certified copies of those documents.

I have no problem bringing any certificate since I was born.

It's only in one place 10 mins.

But I just want to share the info with others so they can go with Quebec requirements and not to get shocked later if they requested any other certificates.

I get your point. They will not ask for middle school documents as it is not a question while filling education section of mon projet. Also, it is clearly mentioned that one needs to produce certified documents for whatever education qualifications entered online. So, if you do not enter secondary and higher secondary details but only bachelor's degree details then providing bachelor's degree documents is enough. Otherwise no points can be claimed for the highest or relevant degree.

Nothing much has changed except for the online application filing and possible online uploading of documents. So, the processing time might be reduced a bit from the previous years.
