My husband is also in Mexico - so I fell your pain. It can be a real strain on your relationship - the emotional toll of this process and the waiting and uncertainty. Though we try not to get ahead of ourselves, we are progressing through the process, it will go by faster than you think nearing what we hope to be the finish line, we have begun planning our life together here, which helps keep us positive and excited. What our goals are, finically, trips, activities. He has never been given the opportunity to even visit, so we talk a lot about the basic stuff that he will have to adjust to (besides the weather) like credit, banking, taxes etc. I have had him read over the coming to canada guide from CIC. I think it will be tough for anyone adjusting to life here, but I'm trying to get him as prepared as possible so it's a little less of a shock.
