Yes. college does provide new offer letter (confirmation to next term), or you call it LOA and have new start date, with program details.
Course enrolment is when you pay your fees online, they create an online student account for yourself where you can select your courses and view timetable. print copy from there.

Hey! I just confirmed from College, they don't have jan 18 intake available for my course but they do have may 2018 intake. But my consultant is saying if i defer for May 2018 intake then i have to do the refiling for my Study Visa although my visa is available till March 2019. Please advise.

Yes, see this is exactly what I was thinking. not all colleges offers all courses in all terms. That's why I asked you to apply for deferral letter which confirms the new course start date (which you said you dont have in jan for your course.) Tough call.
Visa officers at POE don't like people entering for studing the course for which they have their classes 2-3 months later as they doubt that this person can get engaged in cash paid jobs.
Well, your consultant is right, better apply for new permit for May offer letter and explain why you cant start the course in Sept. 2017 due to your employment commitments. And I am sure you have pretty good chances of getting visa again.

Yeah, you are right, it's a tough call. But even if i defer for May18 intake, i will be travelling in April only and will be working till 2018 with my current employer. I think showing experience letter at POE should work.
