How does one display proof of work experience in their CSQ application? In particular experienced derived in their academic field?

It's the same for all work experience. Send experience letter in company letterhead following the guidelines set by MICC, send proof that it was obtained legally. Send paystubs, social security contribution letters by company or in your case university.

Doubtful. Even if european applicants get faster processing, it should take at least a year before you get CSQ. After that, another 6 for permanent resident.
