Counting working outside of Canada as foreign work experience through CEC stream

I just completed 1 year of Canadian work experience & I'm planning to apply through the CEC stream very soon. I would like to claim extra points for 1 year of foreign work experience, but I'm not sure if I will be able to. Here's my situation:

I worked around 8 months in a NOC 1 job in the Netherlands 4 years ago. I know I need a minimum of 1 year of foreign work experience to get points, and I did have another part-time NOC 1 job that totals to around 2 months, so I'd have 10 months with these two jobs combined. This year, I worked remotely from Europe for my Canadian employer, and I know that I won't be able to count this as Canadian work experience - but I read that I will be able to count it as foreign work experience. So if these 2 months count towards foreign work experience, I would technically have the 1 year of foreign work experience I need. My question now is: Is it actually possible to count the 2 months of working remotely in Europe for a Canadian employer as foreign work experience, and if yes, how would I be able to provide proof of it? Would a letter from my Canadian employer confirming that I worked abroad during that time be enough?

Would even shorter trips (around 2-3 weeks) of working remotely outside of Canada for a Canadian employer count as foreign work experience, and would I also just need a letter for those written by my Canadian employer confirming this?

It would count as long as you separate them in your work history. Additionally, get the work experience letters accordingly and also attach a LOE while applying to make it easier for the visa officer.
