i have a german friend who is applying for a skilled workers visa and this is what i know. he came to canada for an interview, got the job, the employer had to post the job on the government site for 3 weeks and then sent an LMO (Labour market opinion) to the government "sponsoring" my friend for that position, its just to prove they advertised the job in canada first and couldnt find a suitable candidate. after the 3 weeks the goverment processes the LMO which takes 28 days and then sent it to my friend who then takes all the paperwork and the LMO to the embassy and applies for his workers visa. alll in all it takes around 3 months, granted its not from Ireland so im not 100% certain of the time but it shouldnt be much longer or shorter than that... my friend has been living in south africa for the past 5 years but still carries a german passport... believe me south africa is very slow...so you might have better timing from ireland.
this is for the workers visa but he might come over with you as your sponsor, better if you were married but he could be your fiance etc.
hope it helps and something to investigate.

1. You are a Canadian citizen by birth, therefor you can sponsor himas a common/law spouse. Therefor his occupation doesn't matter. Spousal applications through London 2-8 months for 80% of applications.
See: http://www.cic.gc.ca/english/information/applications/fc.asp for the application forms and instructions.
