I am sponsoring my wife for permanent residency. I am a Canadian Citizen and we both live in England with our 2 children.

We plan to move to Canada if/when she get residency.

She makes more money than me and we would like her wage to be taken into account in the process.

Even though she is the applicant for residency, can she also be the co-signer?

Cheers,

Rids

No, she can't co-sponsor her own application. In any case, co-signers are not needed/permitted for spousal applications. That is because there is no income requirement for sponsoring a spouse only (your children would be Canadian citizens by virtue of inheriting it from you so they are not part of the sponsorship). You can show she has qualifications for work to show that she is capable of being self-supporting. Her work history will be detailed as part of the application, as well, so there should be no doubts concerning her ability to be self-supporting in Canada as a PR.
