Clarification regarding Experience letter

My first employer was kind enough to supply me a detailed experience certificate, but it doesn't have the annual remuneration value (They explained me that as per company policies they wont be able to mention the salary).

The letter does have keywords like hours/week, full time employee etc

Am i expected to provide a LOE for this?
I can provide salary account bank statement showing money coming in (But statements for what duration, 2.6 years of savings account statements will be lot of pages ).
I can provide few payslips, I dont have them all (Might have 3 or 4, random).

Can any one post here a sample LOE. Or atleast a format . .

You can draft up the LOE as follows:

Dear CIC,

I would like to thank you for your time to process my application.

With respect to my Experience Letter issued by [employer] dated [specify date] enclosed in the submitted application, I hereby clarify further information to meeting the details required in connection with the employment.

That is to include the proof of my monthly compensation paid by the [employer] as follows for your kind reference.

+ bank statement
+ monthly pay stubs...

I trust that the enclosure shall be of your acceptance.

But should i supply bank statements for the entire tenure of employment (2.6 yrs) ?
Is it OK if I supply 3-4 payslips (I am afraid that's all I have, since it was my first employment).

No. You just submit the most recent 6 months of the employment which suffices.
