As postdoc doesn't need to get LMO, the NOC code is assigned randomly, either 4011 (according to NOC 2011)/4012 (according to NOC 2006) or 2***(your specialty). You can apply under either of the category but have to make sure your job duties match most of those list on hrsdc website.

let me clear this :
apply work permit
job letter: occupation A , apply occupation B , you may get work permit occupation C ( this is true happened on me , so no laughing )
you have no LMO ,
now when you apply PR , we need reference letter : and offer letter to service as support doc.
so both reference letter and offer letter coming from your company ,
here in my opinion, I think we should use occupation A in reference letter.
but the duties, please keep same with offer letter or other doc you once submit to VO too when you apply work permit.
for the NOC, check the duties to find NOC . forget about all the titles you have.
only in this way, if some Picky VO question you , we can give answer.
because, from the begin to end, we always give the exactly same information, it is them randomly write title in work permit or LMO whatever
they can't give you A NOC when you apply LMO and work permit, next time same doc, give you B NOC conclusion.
it will make people in crazy status.
this is also can explain, why recently reject letter just based on job duties to check your NOC code. not based on titles.
but , even you make job duties same with NOC, and you change titles to something which doesn't appear both in your offer letter or work permit , it would be a trouble.
because no one know where is it from.
