Hello fellas, I'm on a post graduate work permit and working fulltime as a software Developer. I have filed my PR application and have received my AOR.

I have a lot of excellent contract opportunities and there is one that I really like and want to pursue. Do you think quiting my current fulltime job and taking on this opportunity would affect my PR application?
 
I think it doesn't. CIC clearly mentions that applicants don't need to be working after filing their applications.
 
CIC will make a decision on your application based on the information you've provided in your application package, not on your current employment situation. You are free to change jobs, leave the country or do whatever comes to mind.
All you have to do, is keep CIC in the loop. If you switch jobs, shoot them an email.
If you leave the country for an extended period of time, update CIC with a valkid epmaili g address.
