All documents should be less than three months old?
I used to work about an year 5 years ago so those documents are from 5 years ago.....

In order to be qualified for CEC, you must have 1 year skilled experience within the last 3 years...

IELTS is valid for 2 years.
PCC must be submitted within 3 months and then its good for 1 year.
other than that, there is no timeframe for documents. Which other documents are you talking about?

you dont have to submit old job or any education letters or certifiactes.

just the qualifying job letter is enough.. if you are working right now, you can get a letter now or when you have completed 1 year...

I thought I have to submit all documents to prove my history since I have been here...including old job letters or education certificates, etc..

no you dont have to prove the history..
refer to the document checklist for more details... http://www.cic.gc.ca/english/information/applications/cec.asp

PCC is Police Clearance Certificate for security background check and needs to be done

In the check list it say up-to-date letters of reference(From your employers) from your past and current employers for the past 3 years,,,

Other then that PCC less then 3 months old before you apply

IELTS less then 2 years old

recent T4 and NOA and all other docs
