I'm a Canadian citizen who hasn't lived there since childhood and now I want to move back in and sponsor my non-canadian wife.

According to this link:

"You can become a sponsor if you're a Canadian citizen living outside Canada, you must show that you plan to live in Canada when your sponsored relative becomes a permanent resident."

Obviously I've never had a Canadian job or any taxes in Canada but I plan to move and start working. Would this cause a problem?

No, although you'll have to - as it says - demonstrate your intent to return to Canada. You can search for threads here. For employment, you show some professional / employment history, job searches etc., and savings/financial capacity. Your spouse's ability to work also positive. Also anything else: house search, family links, moving, web searches that are relevant, etc.

Two important suggestions:
-whatever you submit with your application, continue to prepare after you submit - IRCC frequently asks for more info, so basically you then provide an update.
-if you've not lived in Canada since childhood, strongly suggest you visit Canada during the process (with spouse if you can).

Or move during process and advise IRCC of change of address (nothing demonstrates intent to return better than actually doing so).
