Can we create 2 Express Entry profile

Hi.. I created an express entry profile and got ITA.. Now while collecting documents, I found arranging documents for one employer seems impossible now. I want to drop the employer's name but EE profile can't be changed now. Without this employer, I still have 3 years of experience.. So it is safe to drop this experience.

Now my question is, can I make another EE profile, without this employer and see if I get ITA.. If I'll get ITA with this second profile, I will reject first ITA and will process the second one.. Since I currently have 1 ITA with first profile, I don't want to reject it just now as I am afraid I may or may not get another ITA in future.. That's why creation of second profile came into my mind.

You can drop the work experience that you don't want to claim points for. There's no issue as long as you're above the minimum selected points of your ITA round.

I am wondering if there is any official statement from CIC website about "no issue as long as you're above the minimum selected points of your ITA round". Could you please let us know where did you find it? In my understanding early on, we couldn't make it lower than the score that you claimed from the first profile created from EE. If what you said is true, that will be a good news for many people including me.
