jdtorres,
no one can tell if you will be invited or not once the express entry kick in because it all depends on who you are competing with at that time and other factors which will be more clear once the program officially launch but as of now your professional experience looks on the weaker side, customer service and marketing coordinator are not the kind of jobs that will grant you entry in canada for sure so you need to find a good job and work there for at least a year to make your chances higher and application stronger because your education is good enough.
as for the quebec its easier if you compare it to the express of entry model but it takes longer to finish the whole process from start to finish including both stages (quebec+federal) you should start thinking about learning french it might of a help in the future plus its one of canada's official languages and having relatives there might give you extra points if they are immediate.
manitoba might be easier though if you have a close friend there willing to sponsor you for pr because they have stream under their provincial nominee program which allows permanent residents and canadian citizens living in manitoba to sponsor friends living overseas.
invest some time in manitoba and quebec's immigration websites this will help you learn a lot and maybe determine which path you want to walk through.
