I'm applying to renew PR Card and of all the evidences that are accepted, I can provide only last 5 years CRA NOAs and bank statements. Now the question is, should I provide every single bank statement from the last 5 years(ie 1 statement per month, which means 12 x 5 = 60 statements)? In other words, do I have to upload 60 separate statements in the online portal?

NO. No, no, no.
The form says provide TWO pieces of supporting evidence. It just has to show you were residing in Canada some of the time.
Two NOAs should be enough. Provide three if you want to be extra careful.
No need to provide five years of bank statements. If anything, just too much.
