I think you guys are really overreacting here. It is highly unlikely a CIC official giving a call to an employer and asking information about the candidate after having an official letter dated and signed by the employer. Now I am not saying it won't happen, but the odds are unlikely.
Let's say they do decide to call the employer. First if the work was done 2 -3 years ago, I am sure the VO would have good reason to believe that the employer won't even remember your name (there are companies with high turnover rates).
Next scenario is where the VO calls the current work location. If everything in the letter is correct and nothing deviates from the job description of what you actually do, there is absolutely nothing to worry because they will have to talk to the person who signed your letter. The person who signs your letter must know what your job description is or else they cannot sign the letter.
I know this whole immigration thing can be quite scary as for some of us Canada is a place where we can achieve our dreams. Worrying might actually increase the chances of making a mistake .
