Considering we sign the undertaking agreement and our sponsor is meant to take care of "our needs" for 3 years. I was wondering does this affect our access to Canadian student loans, if we want to go to College or University.

Anyone have any info or experience on this?

yes you can take loans provided your combined income falls within the range.
 
What I know to be qualified you suppose to be not working full time. There was a program that help new immigrants upgrade their educations/skills go their first then if not enough take student loans.
