I would like to bring my husband to Canada he is from Nigeria. We have a daughter who is one years old and we all live in Thailand together. Just wondering if we can apply from Thailand and how long the process takes. Or is it better for me to apply from Canada?

1. Depends, if you are a Canadian citizen, then you can sponsor while living abroad. http://www.cic.gc.ca/english/information/applications/fc.asp
2. If you are a PR, then you have to return to Canada to submit the sponsorship.
3. If you were a Canadian citizen at the time of the child's birth, then the child is a citizen and if you haven't already, you should apply for proof of citizenship. http://www.cic.gc.ca/english/citizenship/proof.asp

Thank you that is good to know. I am a canadian citizen and my daughter is a canadian citizen as well. Does it matter that I won't have permanent job lined up in Canada since I will probably be supply teaching for a year? One more thing do you happen to know if we have to go for an interview does that take place in Thailand or Ghana?

No, you don't have to have a job, but you have to include with the sponsorship and outline that you will return to Canada when your spouse is issued a visa, where you intend to live and what arrangements have been made, what your work intentions are.
Was your spouse admitted to Thailand for a year? If so then the application will processed through Singapore and the interview would be held in Thailand if necessary. If the application is processed through Nigeria, then the interview would be in Accra.
