It appears they do batch updates as well as updates when something happens on your account, as people who have had their eCOPR updated or status changed to in progress / completed etc shows the updated date on that day as well. For me, I applied for a BOWP on the 2rd of May and they updated my email address on my account on the 4th of May- which is reflected on the Tracker as the last updated date.
It's quite possible that yours just hasn't had any updates or been worked on since the last batch update.
