So do you think I should mention the above reason while filling the details of my spouse and child in the application? Because that’s actually the truth.
Do you think they will reject the application based on this reason or they will ask for further justification or proof???

I would not suggest you to put down your application:
1. If you will try to walk around the system and add your wife again as accompanying, they can point it out as misinterpretation, where you were trying to get more CRS
2. This is how your reason of putting your wife as non accompanying, does sound:
"My wife is too lazy to get IELTS or ECA done, so in order to get more points I am trying to cheat around the system and to sponsor her later. I think that later on she will not be lazy again to get that part done. For children, it does not matter, that they will be separated from their mother for 3+ years (the time that you need to gather evidence of economical support of your wife in Canada and sponsor her)."
So no that does not sound very good. There are many other willing candidates where both partners did their language and ECA evaluations properly.
3. If they reject your application, that depends on the reasons why your wife does want to stay outside Canada (your stated reason is not good at all).
4. What you will face later is rather very very difficult sponsorship application for your wife. (they will your history on hand).
