Passport releasing may not be an issue, if it takes less time like 1-2 weeks

But do we need to provide an NOC from the company to apply for study permit?
It has not mentioned in GC website.

You required NOC if you apply from U.A.E because you are on company visa.

I only received an email from VFS regarding my application submission the next day after submission. Do we have to expect any email from Embassy also regarding document submission?

In some cases they will ask you to submit additional documents if you miss something. (i.e if you have a study gap, they will ask you to provide a statement indicating you activities during that gap). All the communication will be through your email directly from CIC and VFS won't contact you. If your visa is approved CIC will send you a passport request mail and you have to submit it to VFS.

Bur I haven't received any email from CIC regarding "Document Submission & Under Process". Or, they will only contact when they require some clarification. Right?

I hope so. But rejections are high in UAE for expats, because of poor home ties.

1- NOC Letter from my employer (qatar where Iam working)
2- Current Employment Certificate
3- Future Job Offer
4- Passport of my wife and kids
5- Program Prochure

Just what I have submitted more than you is the bank statement which was for 6 months

is it necessary to submit your sponsor's business documents? Or 6 month bank statement will do the job?
