My post grad work permit just expired but I have 2 years experience under NOC 2231. I am not working at the moment so would Express Entry say I have no NOC or would my NOC be 2231 if I am pulled for Alberta Express Entry.

Follow the instructions. I applied from my home country even before I landed as PR.

Your NOCs are in medium demand, so you have a chance. You can select other provinces as well, it won’t affect your AINP chances.
Please help. I created EE May 2019 but with a different NOC, then later edited/changed to 1221 in august.
Am thinking i should delete the profile and create another with the 1221 so as to be visible by AINP plus its 6months left for the other to expire. What do you think guys. Especially the visible part and also be ready for next year incase they have closed their quota for this year?

I don't think you should delete. Updated or not, you visible for AINP so far u showed interest in your profile. You can create another after this one expires
In may. But with another noc. I changed to 1221 in August. So thats what am on currently.
