Well, i wouldn't outright say that it has to be a University but looking at the trend, if you in your 30s, they expect you to have a good experience and only want to study to enhance your skills or gain new skills which will be helpful in your career. And with experience why would you go to a not-so-recognized University or maybe a college. Hence, the intention is clear. You are not studying for the sake of it. Hence a good reputed University makes a difference in your application.
Secondly, you HAVE to prepare a good SOP. It's really important. I wouldn't share mine because you shouldn't try to imitate. It has to be yours; personal and compassionate. Officers understand if it is really genuine or it follows a typical format. For mine, I never looked at any other SOP. I just passionately explained why I want to study what I want to study, why I would come back at the end of my studies, what are my qualifications, what are my job prospects back in India etc. Infact I also had an Express Entry profile where I did not have an invitation. I mentioned that in my SOP and wrote how i will not break any immigration laws and if selected in Express Entry I will follow the law. Which is the truth.
Other than that, all other documents should be provided of course. Be neat, be truthful, be personal, and yes the university matters. Alll the best.
P.S: I am in University of Winnipeg. You can google other reputed Universities in Canada. There are reputed private colleges as well, but many not so reputed ones which are of course legitimate but wouldn't be a good idea in your age.
