You must tell them about your spouse, I.e. You can't say you're single when you're married.
On the other hand, it is optional to make your spouse an accompanying co-applicant. Just be aware though that if you exclude your spouse from the application, he or she will not become PR with you, and you must sponsor him or her later. This can take a long time.

Provided that you don't want your spouse to immigrate, then yes. But as mentioned, once you become PR you would need to sponsor your spouse should they ever decide to immigrate and this can take some time (and expense).
However, if you add your spouse, then they can also take the English test + get education assessed which could add more points to your total in the end.
