I am going to apply for permanent residency via express entry/FSW stream.

I am going to claim points because my aunt/uncle are citizens of Canada.

When do I need the affidavits/proof? when I first fill out the express entry form, or after I got invited to apply for permanent residency aka post-ITA?

so for creating a profile and entering the EE pool successfully and getting invited to apply, I only need very little documents (only school certificates, IELTS results, my own ID...), am I correct?
 
If by school certificates you mean your ECA (assuming you studied outside of Canada) then yes.
 
I studied in canada for my highest degree (phd) and it's what I will be using. but I also studied outside of canada for lower degrees. But anyway, this won't be a hassle.

so, very few documents are necessary?

but I at least will need to provide evidence that I worked for a continuous 1560+ hours even when creating and filling out the profile in order to enter the pool, am I correct?

Nope, not required when filling out the profile.
 
oh, wow.

I haven't created the profile yet so pardon me for asking so many questions (I will graduate in march and I don't want to create that profile so early - it will expire within 60 days).

if this is the case, there may be a lot of fakes (unqualified candidate) entering the pool, am I correct? (of course I am no one of them)

No, the profile will be active in the pool for a period of one year. But it is best to create your profile after you graduate.
