Accepted proof of past employment for Skilled Trades Class in EE

Hi all,

My brother is a Pizza Chef in Italy who has 18 months of experience so far with this job (6 were in Canada under working holiday visa). I understand to qualify for the Skill Trades Class he needs 24 months of experience.
My question is, once the time comes and he has met the 24 months quota, what will IRCC require as proof of this experience when, fingers crossed, his EE profile is invited for application? Will letters of his employers suffice? If so what info will they have to provide? if not, what else will IRCC ask for?

A reference letter following IRCC's requirements is mandatory - http://www.cic.gc.ca/english/resources/tools/perm/express/intake-complete.asp

Look under "proof of work experience"

Anything else he can add (pay stubs, tax returns, offer letter) is an added plus.
