I would say you belong in the minority when it comes to this situation. Most cases where applicants applied with less than 1 year of full-time experiences were rejected right away. I've seen cases where people were off by a few days and were rejected. But good for you that they were able to accept your case. Some VOs would count your work experience days to its crust so I always tell people to work past 1 year so there wouldn't be any issues.

Yes you can include paid vacation in your one year experience. However, you cannot claim more than 37.5 hrs in a week even if you have worked ... lets say 40 or 45 hours. You need 37.5hrs/week AND 1950 hours total AND 12 months of experience.

Working hours, duties, salary etc ahould be part of the reference letter you get from your employer. NOA and T4 should reconcile with the salary details you have in the reference letter. These are the basic documents you need to submit with your application.

If CIC finds any non-reconciling information, then can ask for supporting documents like salary slips, work contracts etc. But these are not mandatory unless specifically asked for.
 
I read as processing fees will not be refunded, hence would like to confirm if I should go ahead and apply for or not as I have 2 weeks of short for one year, but have sufficient work hours (more than 1800 hours), please confirm.

You will have to make this decision yourself.

No one here can tell you for certain if your application will be accepted by CIC even though you are two weeks short or if it will be refused.

You will have to decide if you want to take the chance.
