LPP completed on July 20 and tracker updated July 22. Its strange how we look at the tracker during the week and it updates on a weekend. Hoping to get Oath invitation soon

Yes you may skip it but you will have gaps when you fill your work history, you might still have to add information but in the letter of explanation you can write that why you didn’t provide the documents.

Hi, in my application last year I only listed all my full time jobs.. I did not list any part time jobs which I did as an international student .

The letter will be a summary of what all documents you have added and why you would like to stay in Ontario. Any document which is needed and is missing you may also explain the reason why you have not provided it.
