i dont think so because my self when i filled up my applications i wrote down entrepeneur, beacuse that is what i do know, i didnt write down employed or something like that... so far i have not had any problem

if you can take both it's better but depends on how many points you make without french.. in my case i applied just with IELTS and was enough because the others aspects of my profile (plus IELTS points) gave me enough points to get my CSQ....

De hecho HOPE en estos momentos estoy en montreal como turista y en el consulado de mi pais aca en montreal tramitare los certificados de la policia y para recibirlos tengo que estperar alrededor de 8 semanas... entonces estaba pensando para adelantar enviar mi solicitud al gobierno de canada...

Yes you can apply even though it has already expired ... however if you need your IELTS to get at least the minimum score to be accepted by Quebec i recommend you to do it again...
